Key Lime Fudge

Every time we serve this fudge to our guests, they love it. The recipe is super easy to make, and does not require a candy thermometer like most fudge recipes call for. Rich, creamy, with just a hint of Key lime. Perfect for the holidays, or any time that you want just a taste of the Florida Keys. This recipe is also great with fresh, Florida orange juice, and oranges in place of the Key limes.

Ingredients
  • 14 Oz Sweetened Condensed Milk
  • 2 Tbsp Key Lime Juice (approximately 3 Key limes)
  • 3 Tsp Key Lime Zest (use a microplane to keep the zest pieces small)
  • 3 Cups Red Onion

Instructions
  1. Butter a casserole dish or 8"x8" baking dish, and set aside.
  2. Place sweetened condensed milk and white chocolate chips into a large sauce pan and place on the stove over low heat. Stir chocolate mixture until all chocolate chips are melted and incorporated into the sweetened condensed milk.
  3. Remove from heat and stir in Key lime zest and fresh Key lime juice.
  4. Pour mixture into your prepared baking dish.
  5. Cover and chill for at least 2 hours, or until Key lime fudge is set and hard.
  6. Remove from the refrigerator and enjoy!

Ingredients
Empanada Ingredients
  • 2.5 Cups Key lime cake or pound cake (cut into cubes and toasted)
  • 1.5 Cups Whipping Cream
  • 1/3 Cup Powdered Sugar
  • 1 Lb Strawberries (fresh; cleaned and sliced)
Key Lime Cream Ingredients
  • 8 Oz. Cream Cheese (cut into cubes and softened)
  • 14 Oz. Sweetened Condensed Milk
  • 12 Oz. Evaporated Milk
  • 1/3 Cup Key Lime Juice
  • 2 Tsp Key Lime Zest (4-5 Key Limes)
Pecan Crunch Ingredients
  • 1 Cup Graham Crackers (chopped coarse)
  • 1/2 Cup Pecans (chopped coarse)
  • 1/4 Cup Brown Sugar (packed)
  • 1/2 Cup Butter (cold, cut into cubes)

Main Preparation
  1. Place a small amount of key lime cream on bottoms of trifle bowl. Top with toasted pound cake cubes. Then sprinkle pecan crunch. Repeat layering. Add fresh strawberries and more crunch. Top with fresh whipped cream. Now this is a Keys Dessert!
Key Lime Cream Preparation
  1. Place all ingredients into a bowl and mix until all the cream cheese is incorporated into the mixture. Cream may be a little chunky due to the cream cheese; this is OK. Refrigerate for at least an hour before use.
Pecan Crunch Preparation
  1. Preheat oven to 350 F. Using a food processor on pulse or a dough cutter, blend mixture until it is crumbly. Press mixture onto the bottom of an ungreased 9x9x2 pan. Bake for 10 to 15 minutes, or until entire mixture is bubbly and brown. Remove from oven and allow to cool. Mixture should look like a giant cookie. Once cool, break into chunks.
